For Northern California couples looking for the ultimate staycation, Rosewood CordeValle located in San Martin, California, is the spot to escape. As you wind through the hills, you drive up on this beautiful hidden gem of a resort located within the Santa Cruz mountains, overlooking a 260-acre championship golf course, which hosted the 2016 U.S. Women’s Open.
Rosewood CordeValle is a luxury resort that is spread over 1700 acres of rolling hills. The craftsman-style homes, rooms and suites are lavishly charming and cozy, and offer a feeling of comfort that makes this resort feel like a home away from home.
Test your skills on one of the most challenging golf courses in California, play a round of tennis or get your workout in at the gym, followed by a luxury spa treatment at Sense Spa. The resort also features an 85-acre winery and vineyard which adds an additional activity to take advantage of during your stay. Or, if you are like my husband and enjoy cycling, you will find numerous cycling routes in the area that take you from San Martin to the coast. No matter what activity peaks your interest, you are sure to enjoy your time at this Northern California resort.

Upon arrival, you will be greeted by a gate keeper. Once you arrive to the resort lobby, you will be greeted by the friendly staff members who load your baggage onto a golf cart to shuttle to your room. From here you can valet your car, check into your room and begin exploring.
Dining
My husband and I got a bit of a late start to our first evening of our staycation due to traffic, so we enjoyed a late dinner at Il Vigneto, one of Rosewood CordeValle’s three restaurants. This restaurant is the more upscale eatery within the resort, but still has a casual and cozy feel. This restaurant features contemporary California cuisine with a latin flair that us Californians love.
Il Vigneto gets all of its seafood daily to ensure quality and freshness, and their menu is sophisticated, yet somewhat familiar featuring a twist on some of your favorites. Their menu is always changing based on what local seafood that has been brought in that day. You can expect to find seafood delights like trout, muscles, prawns, and oysters, along with your favorites like chicken, veal, steak, lamb and more. We were lucky enough to get to enjoy the tasting menu which included fresh muscles, a brilliant avocado roll that I still crave, and homemade churros that melted in your mouth. We walked, or rolled, out of Il Vigneto with smiles on our faces and happy bellies.
The next day, we enjoyed lunch at One Iron Bar, which included the best popcorn we’ve ever had. The service was friendly and upbeat, and we enjoyed sitting at the bar while watching sports on the big screen. I highly recommend the lobster tacos or soft shell crab sandwich, paired with Rosewood CordeValle’s specialty beers.
Our Room: Bungalow
Room 30, our Bungalow, was the perfect couples retreat. This 750 sq. ft room featured a large King sized bed, wet bar, walk-in closet, flat-screen TV, large bathroom with separate shower and whirlpool tub and large double vanity with sinks and a separate sitting vanity perfect for doing hair and makeup. We enjoyed an open-air back patio overlooking the golf course, a spacious sitting area in front of the gas fireplace and access to our own in-room coffee with a mini Keurig machine.
The Spa and Fitness Center
While my husband enjoyed a nice long bike ride through the hills, I relaxed during an hour-long massage. My entire Sense Spa visit was wonderful and went so much further than just a massage. This was an experience.
I arrived to the spa about thirty minutes before my scheduled massage time so that I could relax in the whirlpool, steam room, tea room and just get into the mode of relaxation without kids. I was provided with a locker, sandals and a robe, along with fresh water, fruit and tea. Following my massage, I showered and took my time getting ready for the rest of the day using the spa’s amenities.
Final Thoughts
Overall, my husband and I thoroughly enjoyed ourselves and will definitely be scheduling another staycation at Rosewood CordeValle. This resort absolutely blew my mind and I can’t believe I’ve lived in California my entire life and have never heard of this hidden gem. To learn more about our stay, check out our video below.
