Zesty Chicken, Black Bean and Rice Soup
• Olive oil
• 1 onion, diced small
• 4-5 carrots, peeled and diced small
• 3 celery ribs, diced small (ribs removed if you prefer)
• Salt and Black Pepper for seasoning
• 1 teaspoon ground cumin
• ½ teaspoon coriander
• ½ teaspoon chili powder
• Pinch cayenne pepper
• 4 cloves garlic, pressed through garlic press or minced
• 5 cups low sodium chicken stock
• 3 – 3 ½ cups cooked, shredded chicken breast (or pulled from a rotisserie chicken)
• ½ cup frozen peas, thawed
• ½ canned black beans, drained and rinsed
• 1 teaspoon lime zest
• 1 tablespoon lime juice
• 2 tablespoons chopped cilantro
• 3 cups cooked Jasmine rice
• Jalapeño slices, tortilla strips, and lime wedges, for garnish

This recipe looks wonderful for the very cold winters days that we have been having. I enjoy anything with black beans also.
