Lately I have been hearing a lot about the benefits of coconut oil. I have even seen it touted on the Dr. Oz show recently. I recently received a sample of Tropical Traditions Gold Label Virgin Coconut Oil and couldn’t wait to try it. The first thing you notice when you open the jar is the luscious coconut smell!
I first tasted it on a spoon, expecting something thick and greasy like Crisco. This is surprisingly silky and tasty! It is not at all what I expected. Mine is solidified as it has been pretty cool here the last few days. If the temperature reaches over 75 degrees it will turn back to an oil consistency. I would describe this as similar to a butter consistency.
After reading through the Tropical Traditions website, I decided to use my coconut oil for cooking dinner tonight. After reading through the 100’s of recipes on their site, I just decided to make some oven fried chicken since I already had all the ingredients on hand. I did a simple recipe: First I buttered the pan with the coconut oil. Then I floured 2 chicken breasts, dipped them in egg wash, then seasoned breadcrumbs and then laid them in the pan. I used my silicone pastry brush to brush on some melted coconut oil so I wouldn’t have to flip my meat halfway through cooking. I baked the meat at 375˚ for about 25 minutes until it was nice and golden brown. The coating came out awesome and crispy, and actually stayed on the chicken! Usually I lose the bottom coating when I take my chicken out of the pan; it’s so frustrating. The bottoms of the chicken pieces were not greasy like they are when I use butter. The taste of the coating definitely had a slight ‘coconut-y’ taste and the chicken was nice and moist! My husband even liked it, and he is picky about everything he eats!

I love using coconut oil. Our favorite is Coconut Chicken: I cut chicken breasts into strips, dip them in egg, then into a Panko & Unsweetened Coconut mix. I lay them out on parchment on a baking sheet and gently baste them in about 2-3 Tbsp. of melted coconut oil. Bake at 400 for 25 minutes, turning them halfway through. Serve with a warmed sweet chili dipping sauce. My family LOVES them!
